It is in the Philippines where you will find one of the world’s finest and most coveted produced coffee which have been eaten and passed through the digestive tract of the nocturnal, cat-like animal called palm civets. These cats supplement their diet with forest fruits, edible leaves and roots. Having an excellent palate, they are known to eat the sweetest, ripest and premium quality coffee berries. The civet removes the outer berry covering, then swallows them. Passing through the civet’s digestive system, they are naturally fermented and decaffeinated before being expelled as coffee parchments.
Before sunrise, Blaan tribe forest dwellers search the forest floors and carefully handpick these precious coffee parchment droppings from the wild civets. The parchments are thoroughly washed, sundried and naturally hulled. The cleaned beans are precision roasted that yield the aromatic, unique and distinctive drink up to the last drop of your coffee.
